Super Veggie Quesadillas

A recipe the whole family will love! Don’t be put off by the ingredients, these quesadillas are so yummy you’ll forget about the brussel sprouts!

Ingredients

1 tbsp Olive Oil
1 large Zucchini (grated)
200g Mushrooms (finely chopped)
6 Brussel Sprouts (finely sliced)
1 Red Onion (diced)
100g Baby Spinach
1 can Beans (black, kidney, pinto - your choice)
1 tsp Cumin Seeds
1 tsp Paprika
1/2 tsp Oregano
1/4 tsp Garlic Powder
1/4 tsp Onion Powder
1/4 tsp Chilli Powder (optional)
Salt & Pepper (to taste)
6 Wholegrain Wraps
Fresh Coriander
Grated Cheese
Tomato Salsa
1 Avocado (smashed)
Sour Cream

 

Method

  1. Heat the olive oil in a pan and saute zucchini, mushrooms, brussel sprouts and onion for a few minutes.

  2. Add the baby spinach, beans, dried herbs and spices and saute for a further two minutes.

  3. Lay a wrap on a sandwich press and cover half with the mixture from the pan. Add some coriander leaves, cheese and tomato salsa.

  4. Fold the wrap in half and toast in the sandwich press for a few minutes until your cheese is nice and gooey and the wrap is golden.

  5. Cut the wrap into three triangles. Serve with sour cream and freshly smashed avo!
